Quinoa Pistachios Feta Salad

I am obsessed with this amazing protein packed salad. Great flavors

The amounts of each ingredient can be increased or decreased.


INGREDIENTS:

- 1 cup washed, cooked, and cooled quinoa

- 4 mini cucumbers

- 1/2 to 1 can of chickpea or white lentils. I have used both and they both are delish. How much is up to you!

- feta cheese to your liking - I LOVE feta cheese so I add a fair amount.

- fresh chopped mint (good palmful)

- fresh chopped parsley (good palmful)

- 1/2 cup roasted pistachios


DRESSING:

- 1/2 cup olive oil to 1/4 cup lemon juice.... use less or more depending on the flavor you are looking for. Add pepper to the oil mixture.


Pour over the salad and you have an amazing very simple but delish protein packed salad.
