OH MY... these have quickly become my fav muffin for so many reasons. My apple tree is dropping apples left and right and it is as full as can be. I hate wasting anything so yummy. Scrolling through my FB thread, I found Miss Alicia Krips with the same dilemma of too many apples. She was searching for recipes and had posted a picture of these amazing looking muffins and it was on!!! She sent me the recipe and the picking began.
I have tweaked these a fair amount and am on my 4th batch of making them, as they are a huge hit with my crew. I always come up with few gluten free and vegan friendly options for our family as well as dairy free when I can. This recipe worked perfectly making a few minor changes! For the original recipe - check out the web site above.... for mine... keep reading and I have bolded the changes I made.
INGREDIENTS:
-4 tbsp vegan or regular butter - I went with melted (it asks for 8 tbsp - I cut this in half)
-1/4 cup dark brown sugar
-1/4 cup coconut sugar (asks for 1/2 white refined sugar - I cut this in half and changed it to coconut sugar)
-1 large egg
-1/2 cup coconut unsweetened yogurt - you could use regular unsweetened yogurt (it asks for 1 cup of yogurt - I cut this in half and added the unsweetened apple sauce instead)
-1/2 cup unsweetened apple sauce (my own tweak instead of 1 cup of yogurt)
-1 cup almond flour OR 2 cups and no regular flour (gluten free) (my own tweak - asks for 1 cup whole wheat no almond flour - I wanted gluten free)
-1 cup white flour OR whole wheat (I used the white flour once and then doubled the almond flour another time - both worked!)
-1 tsp baking powder
-1 tsp baking soda
-1/4 sea salt
-11/2 tbsp real cinnamon - I am picky here! I don't buy fake cinnamon. It doesn't have the same amazing benefits and it really doesn't have as strong of a flavor
-1/2 tsp ground nutmeg - we aren't nutmeg fans so I didn't add this
-1/4 tsp ground cloves - again - we don't LOVE cloves in baking - ham yes.... baking no so I didn't add this... thus I added the extra 1/2 tbsp of the cinnamon
-2 cups of apples - peeled, cored, and finely chopped. I kinda left them a bit chunky
-1/2 to 1 cup of pecans - I added this …. oh my …. soooo good! (no nuts are originally in this recipe)
WHAT TO DO:
-prepare the apples and put them off to the side
-prepare the pecans and up them off to the side
-add the sugars, butter, and the egg - mix well (again I melted the butter so it was very simple to mix)
-add the yogurt and stir all together
-add the flours, baking soda, baking powder, salt, and cinnamon (other spices too if you like them!)
-add in the apples and the pecans and mix it well
-put into muffin tray and then sprinkle with brown sugar - just a little!!!! but this is just the added touch
-bake at 375. I called for 20-25 minutes but with the change in the recipe I found mine took 30 minutes and were finished nicely. I make smaller ones - not filled to the rim - 3/4 full in the muffin tray
ENJOY!!!! These are ahhhhmazing and really quite simple once you have the apples all prepped. I prepped extra apples and froze them for the next batch. Maybe I will try coconut flour next time.
